Because of circumstances, there are three separate aspects of SHIKI. They cannot be considered multiple personalities as they all meld together, forming what he is in the end. These three aspects is his half demon blood, the ancient vampire Roa that reincarnated as him, and SHIKI, the host himself.
In the main story, SHIKI was reduced to a being that only cared about satisfying his own desires. He no longer cared about the people affected by his actions. He'd get irritated if the people he killed bored him, not once thinking over what he did. It was just natural to him, after all. Even Kohaku, his personal maid since he was young didn't stir anything in him. He'd violate and abuse her, complaining how she was so emotionless about it the whole time. This was due to his 8 year isolation and growing insanity. Throughout those 8 years, he had to endure his demon blood's instincts and the voice in his head that kept growing stronger as he got older. Besides that, Kohaku, his personal maid, was convincing him that his suffering was his family's fault.
His demon blood gave him the instincts of a demon. This gave him an addiction to killing and twisted his way of thinking to be more fiendish than originally intended. He'd feel extreme discomfort and pain if he didn't kill for long, so he'd often go out at nights to hunt someone. At first, he'd kill just because he felt he had to. He claimed that if he truly enjoyed killing, he would've killed all the time instead of just some nights. In the end though, he showed no remorse and thought that everything he does to satisfy himself is right. He'd kill just because he felt like it.
SHIKI was very obsessive about his sister. Whenever he'd stroll out at night to sate his urge to kill, he convinces himself that he's hunting down and killing her. He hates Shiki for taking away everything he ever had. Still, the only thing he ever tried to get back was his sister. She was that important to him. He eventually kidnapped her after seeing Shiki sleep with her in his dreams. He wanted to claim her as his. He wanted to protect her. He wanted to kill her.
Roa is a vampire that reincarnates by picking an unborn child to bind his soul to. While he originally had a personality and would take over when the child comes of age, he eventually degraded into just a voice of his deepest desires. By the time he reincarnated as SHIKI, the only things carried over from his original self are his magecraft knowledge, vampiric qualities, pursuit of true immortality, and yearning for Arcueid. Normally, Roa's will should've taken over SHIKI's personality once he reached 16. Since SHIKI's mind has gone unstable before then, Roa's will was unable to control him. All Roa could do was give SHIKI the desire to do something.
In an alternate route of the game, SHIKI regains his personality and Roa becomes more dominant, changing his goals. In Akiha's route though, Roa only further fuels SHIKI's intent to kill and gives him vampiric urges. Because of Roa, SHIKI also thirst for blood and has more of a drive to kill things. It is also possible that Roa is what influenced him to be fascinated by knowledge and the concepts of things.
To keep himself from completely falling for either influence, SHIKI had to keep a balance of sanity and insanity. If he recovered too much, Roa would take over his mind. If he lost control too much, his demon blood would take over and he'd just be a mindless killing beast. Having to keep that balance for so long may have contributed to his insanity in the end.
When he's sane, SHIKI is somewhat easygoing. As a kid, he'd skip lessons to go out and gather the servant kids in his mansion to play around. He befriended Shiki just because he seemed lonely. There was a time he randomly met a killer and ended up chatting with him for hours about nothing. There's even a side story where SHIKI meets Shiki after his death, and he just lets everything go, being happy just seeing that everyone has been doing well since then. It doesn't matter who he was talking with or why, as long as it interested him. He just really enjoys talking about things.
Specifically, he really enjoys showing off what he knows and bouncing ideas. He loved talking about concepts especially. In the few times when SHIKI got a proper conversation, it always led into discussing a conceptual idea. His talk with Shiki when he was still lucid in Kohaku's route had them get into discussing what defines what is acceptable and what is twisted. In a side story in the fan disc Kagetsu Tohya, he discussed the concepts of his blood inversion, Shiki's death perception, and what determines what is real. Even in the middle of battle, he'd explain concepts about his abilities, Akiha's predicament, and whatever he knew Shiki didn't realize yet. Explaining something was just something SHIKI couldn't pass up, especially if it worked to his advantage. Still, he wasn't the type to give away everything. He liked leaving just enough information to make the listener think about it. In his chats, he'd often leave hints about whatever he wanted the listener to figure out at some point. Some times, he'd omit or delay details to trick his enemies. Still, he never once told a lie. What he said was what he thought, whether it's the complete or just partially what he's thinking.
"You could say he was terribly aloof but at the same time, lonely as well."
This and another game quote summarize his attitude quite well. "He didn't have anything, which is why he looked like he didn't want anything. He seemed very isolated. Isolation is just another name for loneliness, right?" He really didn't have anything left since his identity was stolen and he was considered dead to the world. Without his insanity making him irrationally obsessed with things, there just wasn't much for him to be ambitious about. He was raised to be the head of the Tohno family, but that purpose was gone when Shiki took up his identity and Akiha was made the next head. His insane mindset also meant he couldn't talk to normal people even if he was free to wander in public. He really didn't get much of a chance to talk to others during his lifetime. He only got to really interact with Kohaku who was manipulating him the whole time and Shiki, who he could only talk to once as fellow killers. Having so little might be part of the reason why he can sometimes be stingy about things as well. When he was insane, he would complain when he finds out his victim wasn't Akiha, but would still feast on them. During the side story when he was thinking properly, he'd really insist on Shiki not spilling his wine while pouring it.
SHIKI had gone through harsh things, causing him to be more sly and underhanded. Just because he is not affected by the impulse does not mean he lost the traits he exhibited in the main story. He still has the obsession with Akiha. He is still bitter about his life being stolen from him. It's just that he can hold himself back now. He's sane enough to rationalize why he shouldn't act on those impulses. It would take more to get him to act on his more violent tendencies. Even if he would start conversation or help for more noble or frivolous intentions, he won't hesitate to try gaining an advantage from it if he sees the chance. Even without the lust to kill from the blood, he still would kill and betray if he found it necessary for his goals if it was urgent enough to him.

Akiha felt the same way for Shiki when she inherited what made him crazy, but normally, she's more of an admirer that wished Shiki would realize how she felt. This could mean that SHIKI was a sis-con, but a side story that takes place after his death shows that he was also interested in Kohaku in the end. This means he could have been more of a doting older brother without the insanity.
For anything else, his drive is his impulsive nature. If something interests him, he'll learn more about it. If he likes something, he'll try to obtain it. If he wants to go out and play, he'll go out and play. It would explain a lot on how he easily fell for his demonic nature when his blood awakened. Having killed so much during his insanity while alive and regretting it, he should be more reluctant to kill people. He'd still have no problem killing anything stirring up trouble though, especially if they were a threat to Akiha. He just isn't as nice a guy as Shiki is.

Even if he really wanted to kill Shiki for taking his sister, he didn't charge at him blindly. He tormented Shiki with their shared mind link and made him think he was a killer. During their encounter, he'd distract Shiki with thrown blood swords while aiming to get some of his blood smeared on him so he could impale Shiki with it. He'd rely more on trickery than on straightforward strength most of the time.
In Asgardeventide, his supernatural elements would be dampened, making the half-demon blood and Roa's desires become urges within his control. If SHIKI himself does not want to do what he feels like doing, he can stop himself. He will get his original reasoning back and be able to judge his own actions properly.

Flourish within the city? What a careless command. I'll just end up lazing around with a vague objective like that. Flourishing, growing, succeeding, it's all the same. The definition is all dependent on the desires of each person. There is no set way to go about it. It's all self-satisfaction. What would the gods do if someone's idea of flourishing was destruction? And aren't they just handing everything we need? Flourishing also stems from what we lack, so if there's nothing lacking, how exactly are we supposed to improve here? It doesn't make sense, if it's just this. It's just a vague way of saying to freeload off their world.

SHIKI slammed his head on the desk. Aaaaa, why did he do that? Idiot, idiot, IDIOT! Everything is so clear, now that he isn't preoccupied with controlling himself. Of course Akiha would hate him after what he did! He was a threat in the Tohnos' jurisdiction, giving her even more work to deal with. He tried to kidnap her for his own selfish reasons. He drove her to lose control of her blood. Everything he did just made things worse for Akiha. Sure he was suffering and lonely, but Akiha's well-being and happiness should have been above all else! He banged the desk with a fist. How could he have been so stupid? And aaaaa, none of that crap I spewed made any sense! Making everyting as it was 8 years ago? Akiha choosing someone she'd barely remember over Shiki? How embarrassing! Shiki and Akiha must think of him as some petty idiot now!
SHIKI shook his head, as if shaking off the regrets, and stood up. Bah, nothing I can do about it now. It already happened and Shiki stopped me from making things even worse. They're not here, and he finally got his sense of self back. Flourish within the city, was it? SHIKI stretched a bit before leaving the room. He might not be able to change the past, but maybe he can make up for it a little bit here. Time to play it cool and act reliable for once.
